Derek Dammann is a busy man. The Maison Publique chef was at Buca in Toronto on Monday for the second time in just over a month for a Northern Alliance event in support of Honey Bee Research at the University of Guelph.
The ten course dinner, hosted by Food Network's Kevin Brauch and Buca's Rob Gentile, featured one dish each from Northern Alliance chefs Lee Cooper (L'Abbatoir, Vancouver), Jeremy Charles (Raymonds, St. John's), Matty Matheson (Parts & Labour, Toronto), Will Gilson (Puritan & Co., Boston), Matt Jennings (Farmstead, Providence), Zak Pelaccio (Fish & Game, Hudson), Justin Smillie (Il Buco Alimentari, New York), Lee Tiernan (St. John, London). And Dammann, of course. The chef's contribution was a beautiful dish of foie gras with maple and apple.
Dammann, still in Toronto, also gave Canada AM some face time today to talk about Maison Publique's top ten finish in enRoute's recent 'Canada's Best New Restaurants' for 2013.
