L'Auberge Saint-Gabriel "gets a brand new look" is the message of a (somewhat awkward) communiqué put out today by the Old Montreal restaurant. Not content to rest on laurels, owners Marc Bolay, rocker Garou and Cirque de Soleil founder Guy Laliberté have made significant efforts to revamp Canada's oldest inn over time.
Food-wise, however, the news is still chef Éric Gonzalez, formerly of Laloux, Cube, XO and Ferreira Café. And, specifically, a canard à la presse tribute, of sorts, to Tour d'Argent in Paris.
The venerable duck press. Daniel Boulud has one. Dave McMillan and Fred Morin wax quixotic about the device, on occasion.
How will Gonzalez, a native of Juan-les-Pins, Alpes-Maritimes, interpret this keystone of French cuisine you ask? See below.
