The talk with the Maison Publique chef jumps from his stint at Jamie Oliver's Fifteen in London to Billy Bragg to a memorable discourse on pork tartare: "You can go to any restaurant around Montreal and have steak tartare. Where the fuck do you think the steak is coming from? Likely, some feedlot, but everyone loves their beef tartare. So, when they hear about pork tartare, they're like, 'Oh my God! That's disgusting.'
