Sel Gras opens its doors tonight in the Mile End space once occupied by Bu Bar à Vin. Partner David Martin is calling it a "VERY soft open." The focus will be on "refined comfort food with a Mediterranean flavour".
The chef is Marco Santos, late of Old Montreal's L'Orignal, where he won plaudits for his skill with game from the likes of Food & Wine. Aside from Martin, familiar to many after stints at Plateau bars Lobby and La Porte Rouge, other partners include Farsim Fahandezh (Buonanotte) and Matthieu Arteau (Dominion Square Tavern and Dolcetto). The trio met seven years ago as bartenders at Suite 701 in the Hotel Place d'Armes. Given their enduring presence on the nightlife scene, opening night may not go unnoticed.
