Martin Picard and his Cabane à Sucre Au Pied De Cochon crew guard the seasonal menus at the Saint-Benoît de Mirabel restaurant with NSA-like secrecy. This fall's apple menu was recently unveiled to the public, though, as per usual procedure, not in explicit terms. Picard's food tends to defy verbal description but from the looks of it on Foursquare and Instagram, the new menu features:
· apple-based cocktails
· duck and vegetable soup
· a nose-to-tail, pork-based meat board
· squash, apple, sausage and sage risotto
· various French and Quebec cheeses
· savoury apple pie with cheese and foie gras
· desserts like stout soft-serve and squash and honey mille-feuille
All subject to change, of course. Oh and there's salad.
