Derek Dammann (Maison Publique) and Chuck Hughes (Food Network, Garde-Manger, Le Bremner) headlined a Montreal contingent of cooks at Newfoundland's Roots, Rants & Roars food festival this weekend. The duo joined a cast of chefs that included locals Jeremy Charles (Raymonds), Roger Andrews (Relish and CONA) and fellow out-of-towners Connie De Sousa (of Calgary's Charcut) and Jesse Vergen (of Saint John, New Brunswick's Saint John Alehouse and Smoking Pig BBQ). The sold-out, two-day festival took place in Elliston, a small fishing settlement on the Bonavista Peninsula, and featured a food hike and a roast pairing proteins from the Rock with Canadian wines.
