The timing couldn't be better. In the same week that Hannah Goldfield reviews Chez José for The New Yorker, the couple behind the popular Williamsburg pop-up, José Ramírez-Ruiz and Pamela Yung, will take over Vin Papillon this Sunday and Monday. Joe Beef and Vin Papillon's Marc-Olivier Frappier and Vanya Filipovic will pitch in. Frappier's friendship with Ruiz and Yung dates back a couple of years.
I met Pam when she was in Montreal for a stage at Pâtisserie Rhubarbe. We hit it off. Her and José are very sincere. We all met up again this past March in Paris for Omnivore. The food they cook is very different from Joe Beef but very authentic and beautifully executed.
As for any menu hints, it looks like the focus of Ramírez-Ruiz and Yung's Sunday and Monday service will be Asian. And another word on timing: Vin Papillon is slated for a double review this weekend in The Gazette and La Presse.
