Not familiar with Appleman? Good backstory. The chef was the talk of the New York food world when he left Keith McNally's now-defunct Pulino's for a culinary consultant gig at Chipotle Mexican Grill in 2010. This after Appleman won a James Beard "Rising Star Chef" award and a spot on Food & Wine's "Best New Chefs" list in 2009 for his work at A16 in San Francisco. Appleman also won two International Association of Culinary Professionals awards for the A16: Food + Wine cookbook.
More relevantly for Impasto, however, is Appleman's love of Italy. The Culinary Institute of America grad and top three The Next Iron Chef finalist spent considerable time in the country at the start of his career and is a devotee of salumi. (He also ran the New York City Marathon faster than Joe Bastianich.) Menu details to come.
