2014 looks to be a busy year for Stelio Perombelon (seen here with Patrice Demers at the Les Chèvres reunion dinner at Van Horne yesterday). The former Sinclair chef (Perombelon left the Old Montreal restaurant last May, despite his presence online) instructs and collaborates at his alma mater, the ITHQ, but, most notably, has a new restaurant in the works.
Later this year Perombelon will return to Outremont, where he first made his mark at Les Chèvres. In a short chat the chef told Eater Montreal that he wants the restaurant to strike a contrast from what exists now in the city, both in terms of service and style. The hope is to open by late spring or summer.
Perombelon is also hard at work on La Brigade: une entité de partage des connaissances culinaires qui se manifestera dès octobre 2014 sous forme de site web et de livres dont 3 projets signés a son nom d'ici octobre 2015.
