Cirkus opens today in the old Pyrus Bistronomique on Laurier Est.

Inaugural patrons will have a chance to sample the elevated cuisine of Toulouse native Julien Joré, who has kitchen stints at Brunoise, 357c, Au Cinquième Péché and Au Petit Extra on his Montreal résumé.

Joré's significant other, pastry chef Stéphanie Labelle, runs Pâtisserie Rhubarbe around the corner. Labelle will provide the restaurant with desserts and told Eater a few weeks ago that the menu at Cirkus will be "French and higher-end."

Cirkus opens for dinner today at 1481 Laurier Est between Fabre and Garnier. The restaurant takes reservations but walk-ins are welcome.
