Wonderful restaurant news for the Plateau: Toulouse native Julien Joré, who has put in time at the likes of Brunoise, 357c, Au Cinquième Péché and Au Petit Extra over the last dozen years or so, will soon open Cirkus in the old Pyrus Bistronomique at 1481 Laurier Est.
The restaurant is around the corner from Pâtisserie Rhubarbe. This is no coincidence. Joré's longtime girlfriend is Rhubarbe's owner Stéphanie Labelle, who helped scout the locale.
Labelle reports that the food will lean French and higher-end. Fittingly, with Rhubarbe a mere 160 m away, the pastry chef will provide assistance on the dessert front. The revamp of the Pyrus space is largely a DIY job but the hope is to open Cirkus by the end of October.
