While everyone concentrates on his new restaurant, Lavanderia, a parrilla set to open any day now in Westmount next to Park, chef Antonio Park has had a secret project up his sleeve: Jatoba.
Yes, Montreal's most visible sushi chef is part of the Phillips Lounge revamp. Park is a partner, in fact, and the cuisine at Jatoba will reflect his dual South American and Asian roots.
Other principals include Alexandre Besnard (Le Confessional, Apt. 200, Rachel Rachel), Marco Benatar, Patrick Hétu (A5 Management) and Nic Urli (Hà, Flyjin, Velvet).
The namesake of the self-described Asian fusion restaurant and cocktail bar comes from hymenaea courbaril, a tree common to the Caribbean, Central, and South America.
The redesign of the space is courtesy Amlyne Phillips of La Chambre Design. Phillips recently had a hand in projects like Apt. 200, SuWu and L'Gros Luxe.
