Thierry Daraize Heartily Endorses Underdog Plateau Restaurant Les Cons Servent

The food critic for Le Journal de Montréal pays a visit to Les Cons Servent for the first time since the humble bistro on Papineau was under the helm of chef Stelio Perombelon and pronounces it "épatante."

Daraize calls the ambiance at Les Cons Servent "formidable" and praises service delivered "par des passionnés." On the plate, there are few falters.

A boudin terrine is "savoureuse," if not a little firm. Homemade gnocchi with Jerusalem artichoke purée are delicious, as is the skate with grapefruit. Then there's the calf's liver.

Le plat de la soirée. Un bon gros pavé de foie de veau avec un petit jus, des rondelles d’échalotes frites et un vrai morceau de bacon. Le foie de veau était exceptionnel, autant la cuisson que la qualité du foie, sucré tellement il était frais.

For dessert, Daraize advises to stick with the tarte au chocolat. Little else wows. Overall, however, a very healthy three and a half stars on five for chef David Monette and company.
