Wild Game Poll: Cast Your Vote

Photo: Confederation Beaver from the Cabane à Sucre Au Pied de Cochon cookbook

After extensive lobby efforts from chefs like Normand Laprise and Martin Picard, Montreal restaurants like Toqué! and Au Pied de Cochon will serve wild game to customers for the first time in 2014. The pilot project includes beaver, whitetail deer from Anticosti Island, hare, muskrat and squirrel.

While Montrealers are relatively spoilt for choice when it comes to animal protein, this initiative will expand some horizons. So which gibier sauvage are you most game to try?
