After extensive lobby efforts from chefs like Normand Laprise and Martin Picard, Montreal restaurants like Toqué! and Au Pied de Cochon will serve wild game to customers for the first time in 2014. The pilot project includes beaver, whitetail deer from Anticosti Island, hare, muskrat and squirrel.
