Bilboquet Brews Le Billot on Duluth

Le Billot will offer "un tour du monde savoureux, local et saisonnier" on restaurant row Duluth next month. The splash page for the pub shows a prominent countdown clock that evinces a May 6 open.

Until then, interviews will take place on April 21 and 22 to secure bussers, servers, "mixologists", plongeurs, cooks and a general manager.

Le Billot replaces Taverne Urbaine Sur Duluth (and Spaggio's) at 451 Duluth Est, corner Rivard. The outfit behind the pub is Bilboquet, the Saint-Hyacinthe microbrewery behind such beers as Colonel Cornwallis, MacKroken and Coup de canon.
