The Terroir Hospitality Symposium is set to go down in Toronto on Monday, May 12, with sundry Montreal chef reps in the form of Dave McMillan and Fred Morin, Normand Laprise, John Winter Russell, Danny Smiles and more.
The eclectic program will see the likes of Laprise (Toqué!, Brasserie T!) champion Quebec's culinary identity with Jim Poris of Food Arts, a Gaspésie seafood bounty from Smiles (Le Bremner), a wild foods demo with Winter Russell and Gaspésie Sauvage and a presentation by Montreal winemaker Thomas Bachelder.
One surefire draw, without question, will be a rapid-fire exchange with Peter Meehan from Lucky Peach with Dave MacMillan and Fred Morin of Joe Beef, Liverpool House and Le Vin Papillon. Meehan told Eater Montreal yesterday that he has "nothing but love for Joe Beef and Montreal" and that in terms of the Terroir event's format, McMillan "asked for 200 questions in 20 minutes."
Other notables on the Terroir program include Daniel Boulud, David Chang, Albert Adrià, Amanda Cohen and Kristen Kish. The chair of Terroir Symposium is Arlene Stein, with guest curators Alessandro Porcelli (Cook It Raw) and Ivy Knight (Swallow Daily).
