Since 2002 wild game sausages have been seen in the hands of many market wanderers, and it all comes from one place. Your first encounter with Les Volailles et Gibiers du Marché in Marché Jean-Talon was probably met with a mixture of fear and excitement, two emotions strongly tied to anything sold off the street on a stick but as soon as your teeth pierced into a juicy bison or wild boar sausage - on a stick, natch - you were in heaven. You can find this meat on a stick vendor slash butcher shop across from Le Marché des Saveurs.
