Grace Yeh and Jean-Daniel Nadeau, the couple who gave Montreal Yeh! Yogurt in 2008 and later sold the concept to Jon and Marvin Gurman in 2012, went public with new baby Brigade - "a fast casual custom made neapolitan pizzeria" - this past Saturday.
The Downtown pizza slinger sports a 30 foot marble counter, two 3000 lb bespoke Marra Forni ovens from Italy and covers 2,500 square feet.
"We have worked on the concept for 18 months to get to this point. We're excited to open the first one in Montreal and plan to open more restaurants in the next few years across Quebec," Nadeau told Eater in June.
To prepare for the venture, both Yeh and Nadeau completed a certification course from the Associazone Verace Pizza Napoletana, the official association that regulates and sets guidelines for authentic Neapolitan pizza. From the looks of the photos, Brigade will also put that fancy 900 °F Marra forno to use on poultry and other items as well.
