Europea: Tuesday, October 14
Grand Chef Relais & Châteaux Jérôme Ferrer will host Grand Chef Guy Ravet of l'Ermitage de Bernard Ravet. Located at Vufflens-Le-Châteaux in Switzerland, this XVIth Century family property has been classified as a Historical Monument. Guy Ravet was born into a family of chefs and schooled at École Hôtelière de Lausanne followed by training in Paris at Plaza Athénée and Per Se in New York with Grand R&C Thomas Keller. The reputation of Jérôme Ferrer in Québec is golden with the success of his restaurant Europea renowned for its refined cuisine and exceptional service. Price for the 7-course tasting menu is $119.50.
Manoir Hovey: Thursday, October 16 and Friday, October 17
Executive Chef Roland Ménard and Chef de cuisine Francis Wolf will welcome Mariano Gallego of Cavas Wine Lodge located in the wine region of Mendoza. Born in Argentina, chef Gallego trained in his native country then went to Spain to learn from Carme Ruscalleda at her 3-Michelin starred restaurant Sant Pau prior to be promoted executive chef at her restaurant in Tokyo. He now operates his own restaurant Brindillas and is also consultant at Cavas Wine Lodge. Chefs Ménard and Wolf at Manoir Hovey have been rewarded with many recognitions and accolades for their culinary creativity and commitment to regional products. Toqué!: Wednesday, October 29 and Thursday October 30
Grand Chef Normand Laprise will welcome Grand Chef Mauro Colagreco of Mirazur in Menton, France. Born in Argentina of Italian origins he moved to France in 2001. He soon reached the top of the profession with his cuisine that is beyond trends and close to the terroir. His style is intuitive and relies on the explosion of contrasting flavors. This magical pairing is with Chef Laprise, renowned for his exceptional creativity, love and commitment to local products which has spearheaded Québec's contemporary and innovative gastronomy. Price of tasting menu: $175.00; wine pairing $100.
