Hof Kelsten Takes Accurate Pulse of Restaurant Scene

Jeffrey Finkelstein is the latest "My Montreal" subject for Urban Expressions. In the profile, the Hof Kelsten baker and owner fires off this assessment of the current Montreal restaurant scene.

I like that we're going through a big culinary explosion. I have this nervous worry that too many places are opening up. There are too many people trying to be stars and it's a double-edged sword. We want Montreal to have a million great restaurants, but people need to wait their turn. There's a limited amount of people that can eat out. It's that whole philosophy of staying [at] places longer, learning from masters and head chefs and taking your time to gain experience. So it's sort of like everyone's getting really good really fast, but nothing substitutes experience.

Finkelstein also lists Café Parvis, Buvette Chez Simone, Baldwin Barmacie, Toqué!, Le Club Chasse et Pêche and Moishes as some of his favourites in the city.
