Institut de tourisme et d'hôtellerie du Québec chef/instructor Elvio Galasso will open Jus Pur in Outremont/Mile End in the weeks to come. Other principals in the cold-pressed juice bar concept include Lucy Di Ionno, Peter Klein and chef Michael Ursini (Osteria Venti, Brama, XO).
Galasso, a noted fitness buff, is about to embark on a research trip for the project and adds that it will be a "grab-and-go spot" that may or may not lean strictly raw and vegan. Target open date is mid-October
