Seasoned Dreams

A popular Caribbean caterer has opened a restaurant in a southwest enclave of Montreal, close to Saint-Henri and Côte-Saint-Paul. Seasoned Dreams serves up jerk in myriad forms—chicken, pork, seafood—but none as hyped as principal Jae-Anthony Dougan-Holder's fiery riff on poutine (see above, and below). The West Island-raised chef puts a decidedly Jamaican stamp on other comfort classics too, like jerk fried chicken and waffles, punched-up tartares, and halibut topped with jerk lobster, brown butter, and sage. Appropriately, Dougan-Holder describes his cuisine as Caribbean fusion. Jerk chicken poutine: get on it Montreal.

Status: Seasoned Dreams, 5205 Angers, below Saint-Patrick, (514) 945-5623, now open Tuesday to Saturday.
