The Plateau Makes Room for Chambre à Part, the New Restaurant From La Fabrique

Better late than never.

The principals behind Plateau restaurant La Fabrique had hoped to unveil spin-off Chambre à Part in September. That was not to be, but, good news, manager Stéphanie Labelle, and chef Jean-Baptiste Marchand will (soft) open on Thursday, November 5. The new restaurant is located on Saint-Denis between La Fabrique and La Fabrique Annexe. Marchand will oversee Chambre à Part's kitchen, with chef de cuisine Jérôme Rouault, a past winner of Les Chefs!, late of Maison Boulud, Hôtel Le Bristol Paris, and Hôtel George-V. Management writes that the restaurant's cuisine will focus on "an enlightened and responsible approach to local produce from Quebec, Ontario, the Canadian east coast and north United States."

Status: Chambre à Part, 3619 rue Saint-Denis, call (438) 386-3619 for hours and to reserve. Opens Thursday, November 5.
