Candide, part of Montreal's most anticipated new restaurant crop, opens tomorrow, Thursday, November 26, officially. Led by chef John Winter Russell, the restaurant, located in Little Burgundy's Salon 1861 urban renewal development, will serve "a four course table d'hôte with very few choices, probably a few set entrées, and then a choice for a main, then dessert or cheese, at a fixed price—$40 to $45 per person." Expect regional, seasonal, plant-focused food, with a muted emphasis on animal proteins. Below, a preview of Winter Russell's food, and Candide's space.
