Le Cochon Caché, a self-described 'comptoir gourmand', will open next Sunday in Villeray, reports a Chowhound tipster. The new venture's name is ironic—Le Cochon Caché is all about conspicuous porkiness. Porchetta will be the hallmark here; in sandwiches, with sides and atop salads, poutines and pizzas. Yelp's write-up of the new business includes this tidbit from a Marco B.: "Interned at the ITHQ, trained with Gordon Ramsay and led Montreal's top kitchens." Marco Barone was formerly at gourmet delivery service FreshMint and is described on that venture's Yelp page as "classically trained in French Cuisine at the ITHQ and was an apprentice at the Boxwood Café by Gordon Ramsay in London. Marco's experience includes Head Chef positions at Hostaria and Vinizza."
Le Cochon Caché opens on March 1 at 7901 Henri-Julien, corner Gounod.
