Notre-Boeuf-de-Grâce, the gourmet burger restaurant from Double Pizza partners Mammad Abedi and Jonathan Dresner, is almost a go. The replacement for D.A.D.'s Bagels at 5732 Sherbrooke Ouest hopes to open by the end of the month and, crucially, has itself a chef consultant. Dan Geltner left L'Orignal last May and has kept busy since at pop-ups, as a caterer and as a consultant at the likes of Victoria Pier and SuWu (where he is a partner with A5 Management and SaintWoods). Geltner also has interests in Maison Sociale (set to open soon in Mile End) but reports that he plans to sell his shares with business partner Julien D'Aoust.

"Dan talked to me about doing a burger place together about five years ago," says Dresner. "As you know, Dan is a well-known chef and he's been all over the world and does all types of food and has been involved in so many restaurants but he's always wanted to do burgers. When I called him up in the summer to tell him [about Notre-Boeuf-de-Grâce], he was concerned about how busy he was with other projects but he and I kept talking. In the end we made it work and he's our guy. Beef will be ground fresh daily on site and the fries are fresh, made in house, as well as condiments, shakes, sodas and so on. This will be a great burger joint and should be a great experience for anyone. "

Last November Dresner described Notre-Boeuf-de-Grâce as a compromise between the likes of Burger de Ville and M:BRGR: "N-B-G will serve gourmet burgers, made fresh, in-house, in a refined space. There are no restaurants like it in the neighbourhood."

Update: Geltner is no longer involved in Maison Sociale.
