Rouge Gorge opens today (3 p.m. to 3 a.m.) after months of anticipation and delays. Partners include Laurent Farre and Alain Rochard (Vignoble du Loup Blanc), late of the defunct Le Continental. Other principals in the wine bar include David Veilleux and the owners of the property at 1234 Mont-Royal Est, Christian Hébert and Guillaume Drapeau. Chef Julien Rochard, son of Alain, will oversee a menu that "revisits Mediterranean, Cuban and New Orleans cuisine with local, organic ingredients." The newcomer will "offer a desirable and exclusive range of privately imported wines and simple, original dishes."

Status: Rouge Gorge, 1234 Mont-Royal Est, certified open.
