Aéroports de Montréal will take extreme measures in 2015 to address the sad state of Montéal-Trudeau airport's restaurant mix. As such, a colossal rollout of 17 new restaurants is in the works with concession partners HMS Host and SSP North America. The former made waves at Toronto Pearson in 2013 thanks to alliances with chefs and restaurateurs like Susur Lee, Lynn Crawford, Zane Caplansky and Mohamad Fakih. In the U.S. HMS Host has celebrity chef partners like Rick Bayless, Todd English and Lorena Garcia and, overall, operates some 300 brands (think Starbucks, Chick-fil-A, Outback Steakhouse) and 2,000 restaurants at more than 110 North American airports.
The plan for YUL includes 'Montréal-style' restaurants like Montréal Cuisine de rue, L’Auberge Saint-Gabriel, Hurley's Irish Pub, L’Avenue des Canadiens and "award-winning restaurants" like Le Grand Comptoir and Urban Crave. Also of note, Trinity Taverna and La Queue de Cheval's QDC Burger, both from the Morentzos Restaurant Group. "Montréal–Trudeau is becoming a leading gastronomic hub," declares Aéroports de Montréal executive Charles Gratton. "These new restaurants will provide a good balance between those offering typically Montréal flavours and internationally recognised names."
