What a difference a few months and new ownership makes. The old Paris Beurre is gone; Les Fillettes is here. Almost. The new restaurant from ex-Paris Beurre sommelier Carl Champagne and partners in caterer Pas d'cochon dans mon salon officially opens on Monday, May 18 with a $20 prix fixe lunch. ICYMI the restaurant will ostensibly conserve the soul of Paris Beurre but with more fish, seasonal vegetables, ethnic cuisine influences and artisanal wines. Les Fillettes will also sport a "magnificent" terrasse. Décor-wise the new restaurant's chairs look familiar but the overall aesthetic is a definite departure from its predecessor.
