Prepare to behold the monumental makeover of the former Discothèque Copacabana, Element, and Peel Pub downtown. Soubois, the new restaurant from the mother-son tandem of Francine Brûlé (Les Enfants Terribles) and Alexandre Brosseau (Flyjin) is all set to welcome customers, just about on schedule. Other principals in the bistro du terroir include chef Guillaume Daly (Les Enfants Terribles, Grinder, XO), JP Haddad (Globe), Philippe Rainville (Flyjin, Le Filet, Les Enfants Terribles), Thomas Hatzithomas and Christopher Karambatsos. Concept, design, naming, marketing is my role as it was with Les Enfants Terribles, The Velvet at Auberge Saint-Gabriel, Flyjin, and Flyjin Café. Soubois will be a "bistro du terroir." A French-Canadian bistro serving market fresh produce and sourcing as much wild produce as possible. Our menu will have some classics with a twist but also propose more adventurous options.
Brosseau also describes the restaurant's design motif as "underground enchanted forest." Expect a completely different look for the former bar and club space then—stay tuned for captures of the interior.
