The bygone, beloved Paris Beurre bistro will officially cede to a new restaurant, Les Fillettes, sometime in May. Ex-Paris Beurre sommelier Carl Champagne is behind the new venture, along with partners in popular caterer Pas d'cochon dans mon salon, reports Le Journal d'Outremont. It took five months of negotiation and planning, and a round of major renovations, to get the new space up to snuff. The name of the restaurant is a wine reference—375 ml bottles are colloquially referred to as "fillettes." The restaurant will conserve the soul of Paris Beurre but, in a nod to the times perhaps, plans to lighten it up with more fish, seasonal vegetables, ethnic cuisine influences and artisanal wines. Les Fillettes will also sport a "magnificent" terrasse.
