The Van Horne strip of Outremont is on fire. First there was Les Fillettes, the reboot of the bygone Le Paris Beurre. The new Damas is about to move to the neighbourhood. Now comes word that the old Van Horne restaurant, which closed in April, will soon be remade by the trio of Tina An (late of Foyer in Saint-Henri), and chefs Pablo Rojas and Hakim Rahal, who ends a stint at Laurie Raphaël this month. The new restaurant will be called Provisions.
An reports that the restaurant will seat 25 and will focus on market cuisine. "We will list what ingredients we received that day. Pablo and Hakim will personalize each dish to the customer." The partners hope to open Provisions by the end of July.
