When Soubois principal Alexandre Brosseau (Flyjin, Speakeasy design agency) called the new downtown restaurant an "underground enchanted forest" it was hard to picture. Now we know, thanks to this exclusive photo gallery. The "bistro du terroir" is a complete makeover of the space that once held the likes of Copacabana and Peel Pub. There is wood—a lot of wood— complemented by wall art, tiered dining areas, curved banquettes, two bars, a wine cellar, a lounge, and a sectioned-off, private table for ten. All told, a pretty impressive platform for chef Guillaume Daly's cuisine.
