Hot on the heels of last week's new restaurant announcement from Bistrot La Fabrique, we have some exclusive particulars on the project. The principals in Chambre à Part, slated for end of September, are Stéphanie Labelle, the maître d'hôtel at La Fabrique, and chef Jean-Baptiste Marchand. The address is 3619 Saint-Denis, which conveniently sandwiches the restaurant between La Fabrique and La Fabrique Annexe.
Labelle divulged that "there is quite a story behind the name" Chambre à Part, which translates as "separate room." Marchand will oversee the kitchen at the new restaurant but Jérôme Rouault, winner of season four of Les Chefs!, and late of Maison Boulud, and Hôtel Le Bristol Paris and Hôtel George-V in Paris, will assume the role of chef de cuisine.
