This is how chef Eric Rice describes Rouxtine, his screwball new foray into the world of Montreal street food. "It's a potato waffle dog with cheese in the middle and a poutine sauce for dipping. I got the inspiration from the patato waffle duck poutine I did for the last Poutine Week." Rice's poutine-dog-on-a-stick food bicycle will be on the streets soon. The Fabergé chef is a busy man: Rice was recently implicated in new Plateau bar Perfecto (but is no longer with that project) and co-owns the Roux food truck.
