One of Montreal's most itinerant chefs starts a new job this week. Decades after a stint under Joël Chapoulie at L'Express, Jean-François Vachon assumes command of the iconic Plateau restaurant's kitchen today. Chapoulie retired in 2012 after thirty years at the popular bistro. Vachon recently helped orchestrate Thursday's resurrection. The Chicoutimi native and ITHQ grad has also cooked at the likes Les Caprices de Nicolas, Globe, Le Club des Pins, La Bastide, Café Ferreira, M sur Masson, and Project 67. The chef will now work alongside the likes of the venerable Claude Masson, a.k.a. M. Masson.
