For the past two years Little Italy's Pizzeria Gema has introduced special monthly pizzas inspired by chef friends and mentors. Everyone from Chuck Hughes to Chris Bianco, Derek Dammann to Marc-Olivier Frappier. Now partners Stefano Faita and Michele Forgione, who also own Italian restaurant Impasto and casse-croûte Chez Tousignant in the same neighbourhood, have changed up the routine with Gema's latest custom pizza, from star Toronto chef Rob Gentile. The Buca Supreme, named after Gentile's restaurant empire, will be added to the Dante street pizzeria's menu, permanently, as of 5 p.m. today.
An elated Forgione wrote on Instagram today: "What a PIZZA! I have the pleasure and honour of introducing to all of you the BUCA SUPREME. Inspired by my broski @robgentilebuca ... It's the only pizza in almost 2 years that's going on the menu permanently ... Tomato sauce , smoked caciocavallo, mortadella , capocollo fantino , salame rosa ( all made in house) Sicilian oregano and aïoli .. Just KILLER."
